Sweet Corn & Jalapeño Ravioli
When my family moved from New York and drove across the country to San Francisco, I plotted where weâd eat. One of the most memorable meals was at Rolf and Daughters in Nashville. Even though weâd never been there before, we felt like regulars. The entire meal was phenomenal, especially the homemade pasta; in particular, a sweet cornâjalapeño agnolotti. The moment that I got to California, I tried to re-create that summertime belle from the South. Instead of making agnolotti, which can require more advanced pasta-shaping skill, I make a simple ravioli. These work well as a main or as a side, served with Skirt Steak with Olive Gremolata (see this page). Turn on Johnny Cash and imagine your hand is hanging out the car window, dancing in the warm breeze, while you roll and fill these cover girls.
